Credit- Recipe tin eats – two serves
Fry up onion and garlic, add capsicum and zucchini and fry up for a minute or so.
Add half a cup stock and tinned tomatoes and tomato paste and dried Italian herbs.
When bubbling, add about a cup of pasta and quick cooking veg. Broccoli, cauliflower. Maybe kale. On top and Cook 5 mins with lid on
Remove lid and Cook another 4 minutes or so. Adjust water and salt and pepper till Pasta nearly cooked.
Sprinkle with grated cheese and put lid back on until melted and pasta cooked
Add Parmesan to taste.
